Sweet Potato Fries

I’ve made several versions of oven fries with ingredients ranging from oil to egg whites. Truthfully, I haven’t found a bad recipe yet, but this one doesn’t have any oil and no one missed it at all. I was hesitant to use the cinnamon, but followed the recipe and my family loved it. I’ll be making these again, changing up the seasonings. I followed the recipe from Joy Bauer’s ‘From Junk Food to Joy Food’  with the exception of the cooking spray. I sprayed the baking sheet, but skipped the potatoes and they were still perfect.

Sweet Potato Fries

2 sweet potatoes (8 oz. each)
1 t. cumin
1/4 t. cayenne pepper
1 1/4 t. coarse sea salt
1/4 t. cinnamon
Ground black pepper to taste

Preheat the oven to 400 degrees and coat a large baking sheet with nonstick spray. Slice off the ends of the potatoes and cut them into strips. Spread the fries in a single layer on the baking sheet and spray liberally with nonstick cooking spray. Sprinkle fries evenly with seasonings.

Bake for 20 minutes, flipping them halfway through. To finish, set the oven to broil and cook for 5 minutes, watching them closely.
