These are a super refreshing treat and a perfect no-bake dessert for hot summer days. My boys loved them and had no idea avocado was their key ingredient.
1 C. almond flour
5 pitted Medjool dates
2 T. unsweetened shredded coconut
pinch of coarse salt
Avocado Lime Filling
1 small avocado, pitted and scooped
2 T. fresh lime juice (about 1/2 lime juiced)
3 T. honey
3/4 C. plain Greek yogurt
1 T. vanilla extract
1 tsp. lime zest, plus extra for garnish
toasted shredded coconut for garnish
Pulse the almond flour, dates and coconut in a small food processor or blender and combine. Divide among six lined ramekins and press firmly.
Place the filling ingredients into a blender and blend until smooth. Spoon the filling over the crust, dividing evenly among the ramekins. Freeze until set.
When ready to serve, allow the tarts to thaw slightly, about 10-15 minutes and garnish with zest and coconut.
