Blueberry muffins are a comfort food for me, so that’s always the first thing that jumps out at me when I go through a cookbook or cooking magazine. I have several really good recipes already, but this one got the whole family pretty excited. Most of it was probably the taste, but I also think […]
Sometimes we’re totally motivated to go to the gym or spontaneously meet up for a run, but we can’t because we don’t have the proper gear. For me, I often get so distracted at home that I forget to pack a vital piece in my gym bag. I’ve forgotten everything from shoes to something to […]
My family loves tacos, but I try to limit their meat consumption so this recipe was an exciting find. It’s FAST, easy and was popular enough to implement a Taco Tuesday at our house. For me, a taco is really about the ‘fixings’ and when you have the right ones you don’t even miss the […]
It only took me 4 months, but I finally tried out this recipe from Prevention magazine and I must say it’s pretty tasty and definitely filling. Pear-Almond Smoothie
From “No Whine with Dinner,” these cookies go fast. I cut down the sugar quite a bit and they still turned out great. The recipe calls for 1% milk, but I used non-fat and it didn’t seem to make a difference. They are quick and easy and worth considering a double batch.
I recently discovered Coconut Bobo Bars on a trip to the beach. While they are a convenient snack, the cost quickly adds up when you consider there are three boys here to feed and all of them love coconut. My girlfriend sent me a copycat recipe, which I tweaked just a little to accommodate what […]
I think it’s so fun to get together outside of the gym and our classes and it’s a way to break up the routine. I had a blast running the first of the Portland Running Company’s 5k Winter Series with some ladies from class yesterday. The course for all three events is the same and the […]

Better Blueberry Muffins I made these to celebrate Molly’s birthday and they were a hit with the bootcamp crew and my family. They went together super fast and include ingredients I already had on hand. I can’t wait to try another recipe from Ellie Krieger’s Comfort Food Fix. I forgot the vanilla and they still […]
I LOVE this recipe for a couple of reasons. First of all, it’s EASY and, secondly, it’s a non-mayonnaise based coleslaw, which makes it perfect for a picnic. A healthy coleslaw alternative this has a sweet and sour taste and it’s super refreshing.
